Ingredients
  1. 1 large onion, chopped
  2. 2 large sweet potatoes, diced
  3. 8 medium carrots, diced
  4. 6 cups water
  5. 1 1/2 teaspoons salt
  6. 1/2 teaspoon thyme, optional
Instructions
  1. Mix all ingredients, except salt and thyme, together in a large pot.
  2. Bring to a boil over high heat.
  3. Lower heat, and simmer for 1 hour, until all vegetables are tender.
  4. Puree with a hand immersion blender.
  5. Add thyme.
  6. Add salt to taste.
