These traditional dutch waffle cookies are perfect made in a Pizelle maker.  We love them rolled and filled with Mocha Icing!

For the Kniepertje
  1. 250 grams flour
  2. 1/4 teaspoon salt
  3. 200 grams sugar
  4. 2 eggs, well beaten
  5. 250 ml milk
  6. 75 grams butter, melted
  7. 250 ml water
For the Icing
  1. 1 cup butter
  2. 1 teaspoon vanilla
  3. 4 cups icing sugar, sifted
  4. 1 Tablespoon coffee extract (or 1 Tablespoon instant coffee dissolved in 2 Tablespoons water)
  5. 1 Tablespoon milk (omit if using instant coffee with water)
For the Kniepertje
  1. Mix together the flour, salt and sugar.
  2. Mix together the eggs, milk and butter. Add to flour mixture.
  3. Mix in water and stir well.
  4. Using 1/4 cup ladle, spoon one ladleful into each pizelle mould. Cook for 2 minutes on high until a deep golden brown.
  5. Remove and roll immediately (they will crisp up as soon as they cool, so move quickly!)
  6. Allow to cool, and repeat with remaining batter.
For the Icing
  1. Cream butter and vanilla together.
  2. Add icing sugar and beat until fluffy.
  3. Add coffee extract and milk, continuing to beat until smooth.
  4. Pipe into kniepertjes just before serving.
