Ingredients
  1. 3 chicken breasts, diced
  2. 1 onion, diced
  3. 8 ounces button mushrooms, chopped fine
  4. 2 Tablespoons olive oil, divided
  5. 1 Tablespoon curry powder
  6. 2 cups quinoa, rinsed
  7. 4 cups reduced sodium chicken broth
  8. 1/2-1 teaspoon salt (to taste)
  9. 1 cup corn kernels
  10. 19 ounce can black beans (or pigeon peas), drained and rinsed
Instructions
  1. In a large pot, brown chicken in 1 Tablespoon of the oil.
  2. Set aside.
  3. Sautee onion and mushroom in remaining oil.
  4. Add curry powder and return chicken to pot.
  5. Add quinoa and chicken broth.
  6. Bring to a boil, reduce heat and simmer for 20-25 minutes, or until broth is absorbed.
  7. Fluff with a fork and stir in corn and beans.
  8. Season with salt and pepper to taste.
